Basil and Spinach Pesto Pasta, Vegan Food!

Preparation Time: 8 minutes
Cook Time: 15 minutes
Serves: 4
Serve More: can be stretched to 6+ if you add bread, a salad, Avacado, etc. Get creative!

Ingredients: Feel free to experiment with adding and subtracting what you prefer.
  • 1 Package of Vegan Pasta 
  • 3 Cloves of Garlic 
  • 1 Onion 
  • 1 Handful of Fresh Spinach 
  • 1 Handful of Fresh Basil Spices and Oil
I roughly guess as I cook with spices, don't be afraid!
  • Avocado Oil (enough to coat the bottom of your cookware) 
  • 1 tsp Olive Oil (at least) 
  • 1/4 tsp Salt 
  • 1/4 tsp Freshly Ground Black Pepper 
  • 1/2 tsp Oregano 
  • 1/4 tsp Thyme 
  • 1/4 tsp Sage 
  • 1/4 tsp Rosemary 
  • Dash of Red Pepper Flakes (optional)

Cooking: I usually cook and clean as I go, here is how I started this dish:
  1. First, boil water in a large pasta pot before anything else, now prepare... 
  2. Use oil to cover the base of your smaller cookware and heat on low 
  3. Add uncut, but peeled garlic 
  4. Add onion, can just cut in half, stir 
  5. While the garlic and onion are cooking on low (in the smaller pot, not the boiling water pot), prepare the basil leaves (I buy these on the stem) and rinse 
  6. Rinse a handful of spinach 
  7. Around this time the water will be boiling, add your pasta 
  8. Add the rinsed basil and spinach, at least 2 large scoops of your boiled water, your spices, olive oil, the cooked garlic, and onion to the blender, now blend! 
  9. Once the pasta is 'al dente' (sticks to the teeth), drain most of the water, but leave a little in the container pot (the pasta does not even have to hit the strainer, this will save a step) 
  10. Add the pesto (from the blender) to the pasta 
  11. Final stir 
  12. Let it sit for 5 minutes so it thickens if you can wait! 
  13. Serve! Pesto Pasta has always been one of my most loved dishes. I only recently started to make my own pesto sauce once I went Vegan, I didn't have too many choices, plus It is easier than making red-sauce (in my opinion)! This could not be easier to prepare and it will be worth the experience, try it!
